Your favourite coffee mug can be used for much more than brewing a hot cuppa. It turns out that the quintessential ‘mug’ is an excellent kitchen equipment to dish out some of the most delicious snacks and meals that require not much effort and can be ready in minutes. Sounds too good to be true? Well, see for yourself. We’ve come up with six fantastic mug recipes that are drool-worthy and will make you run to the kitchen right now.
1. Four Cheese Pasta in a Mug
This mug recipe is a dream come true for every cheese lover. It is the quintessential mac and cheese just in a cheesier avatar. Fill half of the mug with macaroni or penne and then add half a cup of water. Place the bowl in the microwave for 2 minutes to cook the pasta al dente. Continue cooking in intervals of two-minutes till the pasta is cooked. Now, add 1/4 cup of milk along 1/2 a cup of cheese and some salt to taste. You can try a combination of Parmesan, Cheddar, Brie and Emmental cheese. You can even add add some chopped leeks, celery and onions. Put it back in the microwave and continue cooking in intervals of 30 seconds, stirring occasionally and gently, for about 1 to 1 and 1/2 minutes. Garnish with herbs like rosemary and thyme and eat immediately.
2. Muffin in a Mug
This mug recipe is healthier, tastier and faster than your regular muffin recipe. This muffin in a mug can be your reason to eat dessert for breakfast. In a mug, combine 1/4 cup flour, 1/4 cup oatmeal, 1/2 cup carrot, 1/2 cup peeled and grated apples. Fold in one beaten egg and some milk. Add one tablespoon brown sugar or to taste. Sprinkle some flaxseeds and raisins on top and microwave for 50 seconds. Check whether it has been cooked completely or not, else you can microwave for another 50 minutes but not more than 2 minutes.
3. Egg Fried Rice in a Mug
This wholesome one pot meal will be ready in just 3 minutes and is perfect to satisfy a sudden hunger attack. Have some leftover rice? This is the easiest way to use it. Take a cup of cooked rice and layer it with some green peas, chopped beans, chopped carrots, some shredded cabbage and sliced spring onions. Place a cling film on top and poke two holes in it. Then, microwave the mug on high for 1 minute and 15 seconds. In the meanwhile, beat an egg in a bowl and add seasoning as per you taste. You can use soy sauce, vinegar and paprika. Pour the egg mixture all over the rice and stir it gently. Now, cover the mug again with cling film and microwave for 1 minute 20 seconds. Once done, stir it a bit and let it stand for a minute before you dig in.
4. Tofu Scramble
This is a lovely tofu scramble is perfect for those who are health conscious. Just bung in some tofu bits, fresh spinach leaves, 1/2 tablespoon soy sauce, 1/2 tablespoon lemon juice, a handful of mushrooms, some salt, pepper and other seasonings – all in a mug and microwave for 1 to 2 minutes. The easiest meal you’ve ever had – you can enjoy it with some toasted bread.
